The White truffle grows only in Italy, Istria and Slovenia. In Italy it is mainly present in Emilia Romagna, Piemonte, Marche and Molise, and in a lesser degree in Toscana, Umbria and Abruzzo. The availability of truffles is related to the season. The ripening time starts from September to December, however it can fructify in July and August too.
It presents a smooth yellow-ochre or yellow-olive coloured peridium, sometimes with rust-brown areas. The gleba is greyish-white in the ripe specimens and it evolves toward the ochre or hazel with very thin veins.

The Black winter truffle is present only in Italy, France, Spain and in a lesser degree in Bulgary, Portugal and Croatia. In Italy it grows particularly in Umbria, Abruzzo, Marche, Toscana and Lazio. The availability of truffles is related to the season: it ripens in winter time, from November to March. It presents a black-brown peridium with little pyramid-shaped warts. The gleba is black-brown that tends to a violet or reddish colour. It presents crowded and thin whitish veins that become reddish when in contact with the air and black during cooking.

It is the most common truffle in Europe. The availability of truffles is related to the season: it ripens mainly from June to September, but it is not rare to find it in other periods. The peridium is black with large pyramid-shaped warts. The gleba colour evolves from whitish to hazel. The veins are crowded, thin and whitish.

The Bianchetto truffle is common in Europe; in Italy it is present in the whole territory, in areas with different environmental characteristics. The availability of truffles is related to the season: the ripening time goes from January to April. The small-medium carpophore ranges from the size of a pea to that of an apricot. The smooth peridium has a variable colour: ochre-yellow, rust or orange-brown, and often spotted. The gleba colour changes from whitish of the unripe specimens to reddish dark brown of the riper ones, with rough shaded whitish-ochre coloured veins.

| Tartufo Uncinatum (Tuber Uncinatum Chatin) |

The size of this truffle is large and it can change from the size of an egg to that of an orange, but at times it surpasses the 10 cm of diametre. The peridium is black with flattened pyramid-shaped warts. The gleba is initially whitish, then hazel and, in the end, brown with crowded thin and whitish veins.
The perfume reminds the hazelnut and it is more pleasant and intense than the black summer truffle’s, to which it is similar.
The harvest time is from September to December, even if it is possible to find it all year round.
It is a common truffle in Italy and France. In our country it is easy to find in the central areas.
